Pumpkin muffins - grain-free, dairy-free, no refined sugar

This is a very easy recipe that doesn't contain any grains, dairy and refined sugar. You can also substitute the almond flour, tapioca flour and coconut flour with 2 cups of gluten-free flour of your choice if you don’t mind the grains.

Ingredients

  • 3 eggs

  • 1/2 cup pumpkin puree

  • 1/3 cup maple syrup or raw honey (little more if you want it sweeter), can also use coconut sugar

  • 1 tsp vanilla extract

  • 1 1/2 cups almond flour

  • 1 cup tapioca flour

  • 1/2 cup coconut flour

  • 1 tsp pumpkin spice

  • 2 tsp baking powder

  • pinch salt

Instructions

  1. Beat the eggs.

  2. Add all the wet ingredients and mix well.

  3. Add all the dry ingredients, mix well and combine with the wet ingredients.

  4. Transfer the batter into a greased or lined muffin mold.

  5. Bake in preheated oven in 365 F (185 C) for about 20 - 25 minutes or until done.
